Crispy Crunchy Fried Eggplant – My Special Homemade Style 🍆✨

  • Bread crumbs

  • Corn flour

  • Salt

  • Lime

  • Water

  • Oil for deep frying

👩‍🍳 How to Prepare

1️⃣ Slice & Season

Slice the eggplants into medium-thick circular pieces.

Immediately season them with salt and a squeeze of lime juice. This helps reduce the slight bitter taste and enhances the flavor. Let them rest for about 10–15 minutes.




2️⃣ Prepare the Coating

Batter:
In a bowl, combine:

  • Flour

  • Corn flour

  • A little salt

  • Water

Mix until you get a thick, smooth paste (not too watery).

Crumb Coating:
In a separate bowl, add bread crumbs. Mix in:

  • Garlic powder

  • Optional seasoning powder or dried herbs



3️⃣ Coat the Eggplant

One by one:

  1. Dip each eggplant slice into the flour batter.

  2. Coat it evenly with the seasoned bread crumbs.

  3. Place them on a plate, ready for frying.





4️⃣ Deep Fry

Heat oil in a deep pan over medium heat.

Carefully fry the coated slices until they turn golden brown and crispy on both sides.

Remove and place them on a paper towel to absorb excess oil.
