Butterfly Pea Flower Mocktail — A Refreshing Drink with Beautiful Colour & Health Benefits
Have you ever seen the stunning deep-blue colour of the butterfly pea flower? Our garden is full of them, and we usually use the flowers to offer to Lord Buddha during our evening worship.
But after learning about all the amazing benefits of this flower, I thought — why not make something delicious and refreshing out of it?
This butterfly pea flower mocktail is not only eye-catching but also packed with goodness. When the flowers are boiled, they release a gorgeous blue hue that magically turns into a soft lavender when you add lemon juice or other acids. It’s a fun and healthy drink to enjoy anytime!

🧺 Ingredients
8–12 fresh or dried butterfly pea flowers. You can buy the flowers as tea also. If it is as tea add 2 tsps.
2 cups water
Ice cubes (as needed)
Mint leaves
1 lemon (for juice and garnish)
1 cup Sprite or any lemon soda
Sugar or simple syrup, to taste
🍹 Instructions
1. Boil the water in a small saucepan.
2. Remove from heat and add the butterfly pea flowers.
3. Cover and steep for about 2 minutes.
4. Strain the liquid into a jug and let it cool completely.
5. Prepare your serving glasses with ice cubes, a few mint leaves, and a lemon slice.
6. Add a little sugar or syrup and a few drops of lemon juice

7. Pour in Sprite until the glass is about one-quarter full.
8. Finally, add the blue butterfly-pea syrup and stir gently. Or you can serve without stirring so it will leave the layers of colours. Purple colour in the midle and the nice blue colour at the top.
9. Garnish with a lemon slice or mint sprig on the rim.
